Peel, halve and deseed the guavas, then place in a heavy-bottomed saucepan with water and bring to the boil. Simmer for 30 minutes until the fruit is very soft, then pass through a fine sieve to create a smooth puree. Return the puree to the pan, add sugar and butter, and stir over medium heat until the sugar dissolves completely. Continue cooking, stirring frequently to prevent sticking, for 45-60 minutes until the mixture becomes very thick, dark and reaches setting point (when a small amount dropped onto a cold plate wrinkles when pushed). Add lime juice near the end of cooking, then pour into a lined 20cm square tin and cool completely. Once set, cut into squares and wrap individually if desired.
