Cut the bacon rashers into 5cm pieces and slice the sausages into chunks. Layer half the sliced potatoes and onions in a heavy-bottomed pot or large casserole dish, then arrange the bacon and sausage pieces on top. Cover with the remaining potatoes and onions, seasoning each layer generously with salt and pepper. Pour the stock over everything so the ingredients are just covered. Bring to a simmer on the stovetop, then cover with a lid and cook gently for 45-50 minutes until the potatoes are completely tender. Taste and adjust seasoning, then serve piping hot in bowls, garnished with fresh parsley.
