Method

Heat oil in a large heavy pot and brown the meat in batches, setting aside. Fry the sliced onions until golden, then add garlic and cook briefly. Return the meat to the pot and add the tomatoes, stock, salt, pepper and coriander, bringing to a boil. Add the cubed potatoes, reduce heat and simmer for approximately 45-50 minutes until the meat is tender and potatoes are cooked through. The stew should be rich and well-reduced. Taste and adjust seasoning, then finish with fresh parsley and serve hot.
