Heat 2 tablespoons of oil in a large frying pan and sauté the diced onion and garlic until softened, then add the aji amarillo paste and cook for one minute until fragrant. Add the cooked beans and rice, breaking up any clumps, and stir well to combine with the spices, salt, pepper and coriander, cooking for 3-4 minutes until heated through. Press the mixture firmly into patties about 8cm in diameter and 2cm thick. In a clean frying pan, heat the remaining 2 tablespoons of oil over medium-high heat and fry the patties for 3-4 minutes per side until they develop a crispy golden crust. Serve the tacu tacu patties topped with crispy fried onions and accompanied by a fried egg, grilled meat, or fish.
