Bring the water to a boil in a large saucepan and add salt to taste. Gradually sprinkle the gari granules into the boiling water whilst stirring continuously to avoid lumps forming. Reduce the heat to medium and continue stirring frequently for 15-20 minutes until the mixture thickens and becomes porridge-like in consistency. The gari should absorb the water and become translucent with a smooth, slightly grainy texture. Stir in the sugar and nutmeg or vanilla extract to taste. Serve hot in bowls, either plain or with a splash of cold milk poured over the top, which creates a pleasant contrast in temperatures.
