Method

Rinse the dried red beans thoroughly and soak in cold water for at least 3 hours or overnight. Drain and place in a large pot with 1200ml of fresh water, bringing to a boil, then drain and rinse to remove impurities. Return the beans to the pot with fresh water, add the dried tangerine peel, dried longan, and jujubes, then simmer gently for 1.5 to 2 hours until the beans are completely soft and beginning to break down. Add the rock sugar and continue simmering for another 15 minutes until fully dissolved, then add the goji berries in the final 5 minutes. Serve the soup warm or chilled in bowls with the softened beans and fruit.
