Peel and coarsely grate the potatoes and onion, then squeeze out excess moisture by wrapping in a clean tea towel and pressing firmly. Transfer the mixture to a bowl and immediately stir in the beaten eggs, flour, salt and pepper to prevent discolouration. Heat the oil in a large frying pan over medium-high heat until shimmering. Drop spoonfuls of the potato mixture into the hot oil and flatten with the back of the spoon to create pancakes about 1cm thick. Fry for 3-4 minutes on each side until golden brown and crispy at the edges. Drain on kitchen paper and serve hot with a generous dollop of soured cream.
