Rinse all dried fruits thoroughly under cold water to remove any dust. Place the apricots, prunes, figs, raisins and dates into a large pan with the water and bring to a gentle simmer. Add the sugar, cinnamon and whole cloves, then simmer for 15-20 minutes until the fruits are softened but still hold their shape. Remove from heat and stir in the rose water, then allow to cool completely to room temperature. Transfer to a serving bowl or jug and chill in the refrigerator for at least 4 hours or overnight for best flavour development. Serve chilled in glasses with the soaked fruits and nuts distributed evenly, adding ice cubes as desired and pouring the sweetened fruit liquid over the top.
