Cut chicken or prawns into bite-sized pieces and set aside. Heat oil in a large frying pan over medium heat and fry the onions until translucent, then add garlic, ginger and dried red chillies and cook for 2 minutes until fragrant. Add curry powder, mustard powder and turmeric, stirring constantly for 1 minute to bloom the spices. Add the chicken or prawns and cook for 5-7 minutes until partially cooked, stirring frequently. Pour in the coconut milk and lime juice, add green chillies, salt and black pepper, then simmer for 8-10 minutes until the meat is fully cooked and the sauce has reduced and thickened slightly. Garnish with fresh coriander and serve hot as a starter with bread or rice.
