Cut the pork into small cubes of about 1-2 cm and place in a heavy-bottomed pan over medium-low heat. Allow the fat to render slowly, stirring occasionally, for approximately 45 minutes to 1 hour until the meat pieces are golden and crispy and most of the fat has been released. Season with salt, pepper, paprika, and garlic, stirring well to combine. Continue cooking for another 5 minutes until the garlic is fragrant. Pour the entire mixture, including the rendered fat, into a ceramic dish or terracotta mould and allow it to cool completely at room temperature, then refrigerate for 4-6 hours until set. Serve chilled or at room temperature with crusty bread, as a traditional Romanian starter or snack.
