Grate the mature cheddar cheese finely. Rub the butter into the plain and wholemeal flours until the mixture resembles breadcrumbs, then stir in the baking powder, salt, pepper and mustard powder. Fold in the grated cheese, then add the milk gradually until you have a soft, sticky dough. Drop spoonfuls onto a baking tray lined with baking parchment and bake at 200°C for 12-15 minutes until golden brown and risen. Serve warm with Welsh butter.
