Method

Slice the beef thinly against the grain and season lightly with salt and pepper. Heat the vegetable oil in a large wok or frying pan over high heat until smoking, then cook the beef in batches for 2–3 minutes until browned; set aside. Add garlic and ginger, stir briefly, then add broccoli and peppers, cooking for 3–4 minutes until starting to soften. Add the pak choi and cook for a further 2 minutes until wilted. Return the beef to the pan and add soy sauce, vinegar and sesame oil, tossing everything together for 1 minute. Serve immediately garnished with spring onions and sesame seeds.
