Method

Wash the shikuwasa fruit thoroughly under cold running water. Cut each fruit in half and juice using a citrus press or hand-squeezed method, collecting all liquid in a bowl and straining through fine mesh to remove pulp and seeds. Combine the fresh juice with cold water, caster sugar, and sea salt, stirring until the sugar dissolves completely. Divide ice cubes between four glasses and pour the shikuwasa mixture over the top, adjusting sweetness and dilution to taste. Serve immediately whilst chilled.
