Method

Rinse the rice thoroughly under cold water until the water runs clear. In a large, heavy-bottomed pot, bring the milk to a gentle simmer with the cinnamon stick, cloves, and a pinch of salt. Add the rinsed rice slowly, stirring constantly to prevent clumping, then reduce the heat to low. Cook for approximately 30-40 minutes, stirring frequently to prevent sticking and burning at the bottom, until the rice becomes very soft and creamy and most of the milk is absorbed. Stir in the butter, sugar, and vanilla extract, continuing to cook for another 5 minutes until the sugar dissolves completely and the texture becomes thick and porridge-like. Remove from heat and discard the cinnamon stick and cloves. Serve warm in bowls, dusted generously with ground cinnamon.
