Method

Heat oil in a large frying pan and brown the ground beef, breaking it up as it cooks for approximately 5 minutes. Add the diced onion, pepper and garlic, cooking until softened, about 3 minutes. Stir in the tomato paste and cumin, cooking for 1 minute to deepen the flavours. Add the diced potatoes, olives, raisins and beef stock, then season with salt and pepper. Simmer uncovered for 20-25 minutes, stirring occasionally, until the potatoes are tender and the liquid has reduced slightly. Adjust seasoning to taste and serve hot as a hearty main course, traditionally accompanied by white rice.
