Method

Combine brown sugar and water in a heavy-bottomed saucepan and stir over medium heat until the sugar dissolves completely. Add the grated coconut, cinnamon, nutmeg, vanilla extract and salt, stirring constantly to combine thoroughly. Continue cooking and stirring for 15-20 minutes until the mixture becomes thick, darkens slightly and pulls away from the sides of the pan. The mixture should reach soft-ball stage (approximately 113°C on a sugar thermometer). Remove from heat and allow to cool for 2-3 minutes until it thickens slightly but remains workable. Using two spoons or a wooden spoon, drop spoonfuls of the mixture onto parchment paper in small mounds, spacing them apart to allow for setting. Allow to cool completely and harden at room temperature for at least 2 hours before serving.
