Mix the oatmeal, flour, salt and bicarbonate of soda together in a large bowl. Rub in the butter until the mixture resembles breadcrumbs. Pour in the warm water gradually, mixing to form a soft dough that comes together but is not sticky. Turn out onto a surface dusted with oatmeal and form into a round, flat cake about 1cm thick. Cut into four wedges, then place on a hot griddle or cast iron pan and cook for about 3-4 minutes each side until golden brown and crispy at the edges. Serve warm with butter, cheese or honey as preferred.
