Sift the flour, baking powder and salt into a large mixing bowl. Make a well in the centre and crack in the eggs, then gradually whisk in the milk to create a smooth batter. Melt half the butter and stir into the batter along with the caster sugar. Heat the remaining butter in a large frying pan or griddle over a medium heat. Drop tablespoons of batter onto the hot surface and cook for 1-2 minutes until golden underneath, then flip and cook the other side until light brown. Transfer to a warm plate and repeat with the remaining batter. Serve warm with butter and jam, honey or traditionally with butter and sugar.
