Preheat the oven to 180°C and grease a 23cm round cake tin. Cream together the softened butter and caster sugar until light and fluffy, then beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Fold in the mashed bananas and vanilla extract until well combined. In a separate bowl, sift together the flour, baking powder, bicarbonate of soda, and salt, then fold these dry ingredients into the wet mixture alternately with the milk, starting and finishing with the flour mixture. Pour the batter into the prepared tin and bake for 50-60 minutes until a skewer inserted into the centre comes out clean. Allow the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
