Grate half the potatoes finely and squeeze out excess moisture using a clean tea towel. Boil the remaining potatoes until tender, then mash smoothly. Combine mashed and grated potatoes in a bowl, then stir in flour, baking powder and salt. Whisk eggs with milk and fold into the potato mixture until you have a thick batter. Heat butter in a large frying pan over medium-high heat and drop spoonfuls of batter into the pan, flattening slightly with the back of a spoon. Fry for 3-4 minutes on each side until golden brown and crispy at the edges. Serve hot with butter, sugar, or savoury toppings such as smoked salmon and sour cream.
