Pat the sewin dry with kitchen paper and season generously inside and out with sea salt and black pepper. Place the fish on a sheet of foil and stuff the cavity with lemon slices and fresh parsley, then dot with butter over the skin. Wrap the foil loosely around the fish, leaving space for steam, and pour the water or wine into the parcel. Bake in a preheated oven at 190°C for 25-30 minutes until the flesh is opaque and flakes easily from the bone. Carefully unwrap the foil, transfer the fish to a serving plate, and drizzle with the cooking juices and remaining melted butter. Garnish with fresh parsley and serve immediately with the cooking liquor spooned over.
