Heat the oil in a large pan and add cumin seeds, letting them sizzle for 30 seconds. Add diced onions and cook until golden, then stir in minced garlic, ginger, and chopped green chillies, cooking for a minute. Add the cubed potatoes along with turmeric, coriander powder, and salt, then fry for 5 minutes whilst stirring occasionally. Add the chopped tomatoes and cook for 10 minutes until potatoes begin to soften, then add the spinach in batches, stirring until it wilts into the mixture. Cover and simmer for 15-20 minutes until the potatoes are tender and the spinach is fully integrated. Finish with garam masala, adjust seasoning, and serve hot.
