The eggs trap air that becomes your primary leavening here, since coconut flour absorbs moisture so aggressively that baking powder alone won't generate the rise you need. Sift the coconut flour, baking powder, xanthan gum, and salt directly into the egg mixture. Whisk by hand for one minute — no longer. Coconut flour hydrates within seconds of contact with the wet ingredients and continues absorbing water as you work the batter. Overworking develops gluten-adjacent networks in the xanthan gum that tighten the crumb and make the loaf gummy. The batter should fall from the whisk in a thick ribbon that doesn't hold peaks. Slice once completely cool, otherwise the crumb tears. Butternut or pumpkin purée can replace up to a quarter of the coconut flour (reduce the batter by one tablespoon of liquid per four tablespoons of purée), though this shifts the texture toward cake and reduces the characteristic coconut flavour that defines this keto bread.
