Garlic Prawn Stir Fry

  1. Peel and devein the 1 kg of prawns, then pat them dry with kitchen paper.
  1. Slice the head of garlic into thin pieces and cut the 0.5 stick of butter into small chunks.
  1. Heat a large wok or frying pan over a high heat until it is very hot, approximately 2 minutes.
  1. Add half of the butter to the pan and allow it to melt and foam, about 30 seconds.
  1. Add the prawns to the pan in a single layer and cook for 2 minutes without stirring.
  1. Turn the prawns over and cook for a further 1 to 2 minutes until they are pink and starting to curl.
  1. Push the prawns to the side of the pan and add the remaining butter along with the sliced garlic.
  1. Stir the garlic in the butter for about 30 seconds until fragrant, then toss it together with the prawns.
  1. Cook everything together for a final 1 minute, stirring constantly to ensure the garlic does not burn.
  1. Transfer the garlic prawn stir fry to a serving plate and serve immediately whilst still hot.
