Garlic Prawn Stir Fry

- Peel and devein the 1 kg of prawns, then pat them dry with kitchen paper.
- Slice the head of garlic into thin pieces and cut the 0.5 stick of butter into small chunks.
- Heat a large wok or frying pan over a high heat until it is very hot, approximately 2 minutes.
- Add half of the butter to the pan and allow it to melt and foam, about 30 seconds.
- Add the prawns to the pan in a single layer and cook for 2 minutes without stirring.
- Turn the prawns over and cook for a further 1 to 2 minutes until they are pink and starting to curl.
- Push the prawns to the side of the pan and add the remaining butter along with the sliced garlic.
- Stir the garlic in the butter for about 30 seconds until fragrant, then toss it together with the prawns.
- Cook everything together for a final 1 minute, stirring constantly to ensure the garlic does not burn.
- Transfer the garlic prawn stir fry to a serving plate and serve immediately whilst still hot.
