Pat the fish completely dry — moisture on the skin prevents the maillard-reaction that gives you colour and flavour. Heat 40 ml oil in a wok or large shallow pan to the point where it shimmers and a piece of ginger fizzes immediately on contact. The oil needs to be hot enough to sear, not merely warm. Lay the fish away from you (to shield from splashing) and leave it untouched for 90 seconds. This is not the time to fuss. Flip once, sear the other side for the same duration until both flanks have a pale golden crust. The skin should feel tight to the touch.

Push the fish to the side of the pan. Add minced ginger, crushed garlic, and whole dried chillies to the clearing oil and stir constantly for 20 seconds — you're releasing aromatics into the fat before they burn. Pour in a generous splash of rice wine (stand back; it will ignite briefly) and let the alcohol burn off for 10 seconds. Add the rice vinegar, which cuts through the richness and sets the acidic backbone. The acid-in-cooking denatures proteins in the braising liquid and brightens the finished dish.

Sprinkle in the sugar and soy sauce, pour in just enough cold water to come halfway up the fish's sides, then cover and raise heat to medium-high. After 2 minutes, flip the fish and cover again. This isn't constant attention — you're building an emulsion of soy, stock, and fat that will coat the flesh. After another 3 minutes, add salt, sliced bird's eye chilli, oyster sauce, and MSG (or chicken stock powder if you prefer). The umami compounds from soy and MSG deepen the braising liquid's body. Continue cooking covered, flipping once more, until the liquid reduces to a syrupy glaze that clings below the dorsal fin — roughly 4 more minutes. The sauce should coat a spoon.

Remove from heat, scatter torn coriander and sliced spring onion across the fish, cover for 15 seconds to soften the alliums slightly, then transfer fish and sauce to a serving dish. Serve immediately with steamed white rice to absorb the liquid.
