Blitz the banana, eggs, protein powder, rolled oats, and baking powder until completely smooth. The banana acts as both binder and leavener — its natural pectin stabilises the eggs while the baking powder provides the lift that flour would normally deliver. Rest the batter for 2 minutes. This isn't cosmetic: the oats continue to absorb liquid, thickening the mixture to the right consistency, and the baking powder begins its reaction with the acidic whey, creating tiny gas pockets that will expand under heat. Without this rest, you'll get dense discs instead of proper pancakes.

Heat a non-stick pan over medium-low heat — this is crucial. Protein pancakes are fragile because they lack gluten's structural network, so high heat will set the outside before the interior has time to cook through, leaving a raw centre. Add the butter and let it foam just until the noise quietens; this tells you the water's mostly evaporated and you're at the right surface temperature. If you skip this signal and pour too early, the batter will spread and stick.
