Heat the oven to 200°C. The tray bake works because you're exploiting two different cooking rates: the vegetables need time to caramelise, the salmon needs just enough heat to set the protein without drying the flesh. Start the veg first.

Toss the asparagus and cherry tomatoes with olive oil, crushed garlic, salt, and pepper. Spread them across a baking tray in a single layer — don't crowd them. The space between pieces matters: it allows hot air to circulate and the surfaces to brown instead of steam. Roast for 8 minutes. You're looking for the tomatoes to soften and split slightly at the skin, and the asparagus tips to catch a little colour at the edges.

Pull the tray out. Nestle the salmon fillets skin-side down into the gaps between the vegetables. The skin protects the underside from direct heat and will crisp against the tray if it makes contact — this is desirable. Squeeze half the lemon over the lot. The acid won't cook the fish at this temperature, but it seasons it and prevents oxidation of the exposed flesh as it heats. Return to the oven for 12–14 minutes. The salmon is done when the flesh is opaque right through to the centre and a fork parts the flakes without resistance. Overcooked salmon looks dry and feels grainy: you're aiming for that moment just before it reaches full opacity, when the residual heat will finish the job as you plate.

Fish at 200°C under roasting conditions will cook through in this timeframe because you've already pre-cooked the vegetables. The dense flesh of a salmon fillet (typically 150–180 g) needs less time than a thicker cut would. Temperature is the controlling variable here: much hotter and the outside sets before the centre climbs above 50°C; much cooler and the vegetables won't develop the flavour compounds that come from the maillard reaction.

Serve straight from the tray with the remaining lemon cut into wedges. Squeeze as you eat. The whole process takes 25 minutes and you wash one tray.
